Sweet Winter Kitchari
The ultimate comfort food, kitchari is easy on the body.
Omit the raisins and garam masala for all season kitchari.
Ingredients:
1 tbsp coconut oil (or ghee)*
1 cup Basmati rice
1/2 cup Yellow Moong Dal (lentils)
2 tbsps Maharishi Vata Churna or 1 tbsp curry powder
1 tsp garam masala
1 tsp black cumin seeds, whole (nigella sativa)
1 tsp coarse pink Himalayan salt
1/2 tsp dried cilantro or 1+ tsp fresh
1/3 cup sultana raisins
6 cups water, give or take
Directions:
Gently toast the spices, minus the cilantro, in the oil for less then a minute. (Have everything ready ahead of time). Rinse the rice and add to the pot. Stir until the rice is coated. Then add the raisins and dal and stir until coated. Then pour in the water and stir. Bring to a boil. Cover and simmer for about 20 minutes, stirring occasionally. Turn off heat and leave, covered, to finish itself for another 15 minutes. Top with cilantro and serve.
